Venison Rack with red wine balsamic glaze

Venison rack is easy to cook and tender , the red wine balsamic glaze is what makes this dish amazing and one of my favourite dishes

Ingredients

  • 1 venison rack roast
  • 3/4 of a cup of red wine
  • 1 Cup of venison stock
  • 3 cloves of garlic
  • 30 mls of balsamic vinegar
  • 3 tsp  brown sugar
  • ½  cup of bread crumbs
  • ½  cup of panko crumbs
  • Fresh mixed herbs
  • oil
  • Mustard
  • 3 Tbsp of olive oil
  • 50 grammes of butter
  • Mashed potatoes and steamed vegetables to serve

Instructions

Salt and pepper the venison rack and seal in a hot pan on all sides. Mix bread crumbs panko crumbs garlic herbs an olive oil in a bowl. Cover the venison rack in mustard and pack on the bread crumb mix to form a crust. Place in the in a hot oven for 40 minutes or until medium rare the rest for 10 min .Fry the garlic in the pan then deglaze the frying pan with red wine and venison stock,  add balsamic vinegar and sugar and reduce , Strain the sauce and reduce to a thick glaze. Add butter to finish. Serve over mashed potatoes and steamed vegetables.
