Coffee Brasied Venison

Warm and Hearty stew with coffee after taste prefect for those cold winter camping trips

Ingredients

  • Oil for frying
  • 1 kg venison roast
  • 3 cloves garlic
  • 1 Large Chili
  • 2 tbsp paprika
  • 1 Tbsp cumin seeds ground
  • 1 Tbsp Ground juniper berries
  • 2 Bay Leaves
  • 1 Can Tomatoes
  • 1 tbsp brown sugar
  • 2 onions
  • 1 Cup Mushrooms
  • 1 cup coffee (filtered or espresso
  • 3 cups Venison Stock (beef stock)
  • 3 Tbsp butter

Instructions

Season the roast and fry in oil until browned on all sides, add onion, garlic and spices and cook for 3 – 5 min. Add coffee, Tomatoes, Mushrooms, Brown sugar and stock and cook in oven or over low coals for 3 – 4 hours (until tender) For slow cooker use 1 cup of stock only

Stir in butter and thicken with flour if necessary

Serve with mashed potato and Greens
